When a comfort food craving hits, sometimes there’s just no time to waste, right? Last week my husband made a delicious grilled cheese sandwich! I know there is no real science to making it, but he said that what appealed to him about the recipe was that you grilled the sandwich with Mayo instead of butter! So he decided to try this Food52 recipe out and find out if mayonnaise was better than butter.
What You Will Need:
– Sharp Cheddar Cheese (any brand could be used to get fancy, we just had the Costco house brand at that moment)
-Sourdough or any rustic bread (we used sourdough)
The original recipe was intended to serve 10 people, so we modified it for just the two of us. All you need is four slices of your chosen bread. Shred about 4oz of the cheese or whatever stacks up well with the size of your bread.
Heat frying pan over medium to low heat. Spread mayo on the outside of each slice of bread. Sprinkle your desired amount of shredded cheese on the inside of one slice of bread, cover with second slice of bread and place in frying pan.
Grill for about 4-5 minutes on each side or until golden brown.
When done, place it on a pate, add some chips or fruit, and lunch is served!
Easy peasy, right!!?
It was super delicious and it was equally as good as grilling it with butter. No waiting for the butter to soften or tearing up bread, and the whole thing was perfectly crispy and melty! This is definitely a great recipe to make when you are in a pinch and don’t have lot of time or simply want to try a new twist on an old favorite.
Movies at the Cemetery
I had the chance to get away this past weekend to do something fun with some friends, Ellie, and my hubby! Got to have an outdoor picnic & watch one of our cult classic favorites Empire Records at the Hollywood Forever Cemetery. For the last 13 years, Cinespia has offered movies during the Summer at this cemetery. It’s such an awesome experience that you will never forget. If you haven’t had the chance to do something like this, you must try 🙂

I took advantage of a sale that Evans was having last week and bought myself a cool shirt! I liked it because it reminded me of Summer- cool shades & great places to vacation. I was so happy with the way it felt and looked on me too. I was able to pair it up with some white shorts and decided to paint my nails in hues of pink and blue and a dash of pink on my pout! I also found the perfect bracelet sitting my armswag collection.
Oh, Miss Piggy, you are so so wise!

Wow, there is so much I want to share to help you catch up with this weekend! So grab your favorite mug, pour something caffeinated, and get really comfortable because it might take a while to get through this list 🙂
1. Okay, so first off did you hear about the $50 Christian Louboutin nail polish? I really didn’t know how to feel about it at first because I looovee painting my nails and splurging every now and then on something luxurious. I mean my heart says “how early does Sephora open on August 6th cause I’m so there!” while my head says, “ummm…$50? Really!? on nail polish!?” So I guess I’m standing at a crossroads right now, lol. How do you feel about it?
2. While we are on the subject of sweet excess! There is this woman from Texas who built a 3 story closet that would make Carrie Bradshaw turn green with envy! But take heart, it’s for a good cause!
3. In case you’ve been living under a rock, the moment has finally arrived for all of us Fifty Shades of Grey lovers-the trailer is finally here, hehehe
4. And if that was not enough for you, let me give you a reason to never cut your hair again. Here is Parks & Recreation’s Chris Pratt braiding a girls hair. We can all go to bed happy tonight knowing that there’s still men like him that exist in the world 😉
5. Men trying on makeup for the first time made me smile, laugh, & put on my feminist hat. Best line of the video is “there is like $6,000 worth of makeup here, and it’s like a cost that I never have to have.” That’s right and we do it all in the name of feeling beautiful. Why can’t we simply be like men and just wash our face and go and still be considered beautiful??
6. Forget the Kim Kardashian phone app, Quizup is my new favorite game that I like to play against the hubby or any person across the world!
Ellie treated me to his fabulous self and came to visit a couple of weeks ago. As the domestic goddess that he is, while hanging out at the pool, he made me a really refreshing drink that he just concocted spur of the moment.
What You Will Need
-White Wine (we used Stella Rosa Moscato)
– Halved Grapes
Put some ice in a glass, pour some wine, add a dash of Ginger Ale, add 4 or 5 halved grapes, and some cubed apples- easy peasy, right?!
Great drink to have as you get your tan on!

I think the best part is that it’s a product developed and made by women for women-super empowering!
Okay, before you think, “she misspelled the word cousin” there is a simple explanation for this! Growing up, my cousins and I loved to watch Perfect Strangers and loved how Balki (Bronson Pinchot) called Larry (Mark Lin-Baker) “Coosin Larry”. Because of that it became a term of endearment for one another, so instead of calling each other by name we call each other “coosin”.
A couple of weeks ago, I went to visit my family in sunny San Diego, hung out with some of my beautiful “coosins” and began reminiscing about the “olden times” hahaha. We recalled cutting out in the middle of night to go to beach bonfires while their parents were asleep, or embarrassing moments of stealthily sneaking into a club (while underage) by being pulled up onto the rooftop in a dress while someone was pushing us up from below. We started to think of the songs that were associated with these funny or memorable moments.
All of that made me think of the power of music, and how music really can play an important part of helping us form indelible memories of certain events in our life.
One of my “coosins” and I were obsessed with G’N’R and would dream of the day of marrying Axl & Slash respectively.
