Sex and the City: The Russian Dessert

Charlotte: Well, it all sounds very old world to me. Very 18th century Russia.
Carrie: Yes, and I live in New York City circa now. I think it’s romantic when someone offers me a seat on the subway.

When I think about anything Russian related, only one thing comes to mind: Aleksandr Petrovsky. For those of you who are drawing a blank, he was Carrie’s love interest in Sex and the City. In my opinion, he was a better match for her than Big,  his only flaw being work came first (well, nobody’s perfect). Plus, Big played one too many mind games!! Anywho, as I was browsing online for new recipes, I came across this Russian dessert known as Raspberry Pretzel Jell-O, which looked too good to resist. Not to mention, it also seemed easy.

6 oz package Raspberry Jell-O
2 cups boiling water
2 cups pretzels
1/4 cup sugar
1 stick butter
1 (8oz) package cream cheese – softened
1 (8oz) package Cool Whip – thawed
1 cup sugar
1 bag frozen raspberries – thawed in refrigerator

Step 1)  Boil water and combine 6 oz pack of Jell-O and stir in until diluted. Then set aside and cool til room temperature.

Step 2) Put 2 cups of pretzels in a ziploc bag and crush using a rolling pin.

Step 3) Melt 1 stick of butter, then add 1/4 cup of sugar and stir. Add crushed pretzels and stir again until butter and sugar are absorbed.

Step 4) Thinly spread pretzels  across a 13 x 9 pan and  place in  the oven for 10 mins @ 350 degrees.

Step 5) Stir softened cream cheese and 1 cup of sugar until it’s smooth.

Step 6) Mix in cool whip until thick.

Step 7) Spread evenly on top of pretzels (make sure there are no cracks or else Jell-O can leak in).

Step 8) Evenly place raspberries over the spread.

Step 9) Pour Jell-O over raspberries and refrigerate until set.

Step 10) Cut, serve, and enjoy!

Prijatnovo appetita!
