Can I Have Cheese With That? Part 2

Still didn’t have enough cheese this weekend?

Well strap yourselves in because as promised, here is Part 2 of  Can I Have Some Cheese With That!   This recipe is for Crispy Cheddar Chicken which can be used as the main dish with the Cheesy Hash Browns (FYI: Combined it’s a really hearty meal).  The recipe comes from a site called Jamie Cooks It Up  that I found with help of my BFF Pinterest, and it is simply juicy and delicious!

What You Will Need: 

Cooking Materials:

  • 9 x13 Baking Dish
  • Sauce Pan
  • Aluminum Foil
  • Plate
  • Bowls

Ingredients for Chicken:

  • 4 Chicken Breasts
  • 2 sleeves of Crackers (your choice – the site used Ritz, but we like Townhouse, anything buttery is good)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup milk
  • 3 cups grated cheddar cheese (we used the pre-packaged grated cheese)
  • 1 tsp dried parsley

Ingredients for Sauce:

  • 1- 10 oz can Cream of Chicken Soup
  • 2 tbsp of sour cream
  • 2 tbsp of butter

Cut your chicken breasts into thirds and set them aside on a plate.   In a food processor or blender, blend/crush the crackers.  Now make your assembly line.  Get three bowls.  Put the milk in the first bowl, the cheese in the second, and in the third bowl mix the cracker crumbs with the salt & pepper.


Spray or grease your 9 x 13 baking dish and set aside.  Dip the chicken in the milk, then the cheese, and then the crackers.  Make sure to press in the cheese and crackers into the chicken.  Then place the chicken in the baking dish.

FYI: Some of the cheese and crumbs will come off as you go, but it’s okay because you can use some of the leftovers to top off the chicken once you are done.


Once all the chicken is coated and in the baking dish, add the remaining cheese on top and sprinkle with the parsley.  Cover with foil and bake at 400 degrees for about 30 minutes.  Then remove the foil and return the chicken to the oven for another 10 minutes or until the top gets crispy.


While the chicken is baking, in a saucepan combine the butter, can of soup, and sour cream.  Mix on medium heat and then keep warm on the side until the chicken is done.  Sauce the chicken right before serving for the finishing touch.


If you want to feel healthy, don’t forget to add some veggies with it. And put some cheese on them!
