Can I Have Some Cheese with That? Part 1

I love me some cheese!! I can put cheese on almost anything- crackers, fruit, chips, meat, fish, chocolate, cookies, and ice cream (okay, maybe not ice cream).  So when this cheesy delight showed up in my life again, I was jumping up for joy at our reunion!  As you know, Pinterest and I are like this (crossing my two fingers), every time I need help she’s always there.  So good ol’ Pinny (Yes we’re on a first name basis) showed me what she had found on a website called NancyCreative, and we became closer than ever.

So say bye-bye to those skinny jeans because once you taste these, you will never want to take off your sweat pants again! (or you can add an extra dozen workouts this week)

What You Will Need:

  • 2 lbs. frozen hash browns (thawed)
  • 3/4 cup or 1 1/2 sticks of butter (melted)
  • 1/4 tsp of pepper
  • 1 tsp of salt
  • 1/2 cup of chopped onion (you can use green onion instead)
  • 1 can of chicken soup
  • 2 cups (1 pint) of sour cream
  • 2 cups of sharp cheddar cheese (you can also use mild or medium cheddar)
  • 2 Cups of crushed corn flakes
  • 9 x 13″ sprayed or greased baking dish
  • Preheated oven @ 350 degrees


There’s so much cheesy goodness to be had, this a two parter! First we’ll make the side dish, and then come back tomorrow for the cheese de résistance!

Preheat your oven @ 350 degrees, spray or grease your dish pan and set aside.

In a bowl, mix the hash browns, pepper, salt, onions, and only 1/2 cup of the melted butter.  Then add the sour cream, chicken soup, cheese, and mix together well. Pour the mix into the prepped baking dish and spread evenly.


Get your corn flakes, smash them up ( make sure they measure 2 cups after, not before) and mix with the remaining 1/4 cup of butter. Lastly, Sprinkle mix over dish.


Place dish uncovered in the oven for about 50-60 minutes (we left it for 50 mins).

Tah-Dah! Pure Cheesy Heaven! Oh ,yeah there’s potatoes in it too!
