White Chocolate Pumpkin Cookies

Friday night my girlfriend, Linny, calls me and says (in a deep Armenian voice) “I dislocated my knee while reaching down for a twix bar!” I clung to my phone and thought, “umm, did she really just say that?” So she begs me to save her from isolation and hunger by baking her my now infamous white chocolate pumpkin cookies.



  • 1 cup of pumpkin (canned)
  • 1/2 cup oil
  • 1 cup of sugar
  • 1 teaspoon of vanilla
  • 2 eggs
  • 2 cups of flour
  • 1 teasoon baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 1 cup of walnuts (diced)
  • 1 cup of white chocolate

In a bowl, you will first mix the pumpkin, oil and sugar for about 2 minutes,

then you will add the vanilla and eggs for another 2 minutes,

finally you will add the flour, baking soda, salt, cinnamon, walnuts, and white  chocolate.


 Lastley, Butter or spray a baking sheet,  use a spoon and dollop batter onto sheet (make sure to leave some space  inbetween each cookie) and bake @ 375 for 10 to 13 mins


Voila! Delicious cookies for an injured friend (guaranteed to make their buttons burst at the seams).


I took an extra step and crafted them up by wrapping them up in cellophane, making a pink tulle bow, and made some pink crutches!
